Abstract

本发明涉及一种从大蒜中提取蒜氨酸的方法,是采用煮沸或微波或酸溶液煮沸对大蒜中的蒜氨酸酶进行灭活,制成蒜浆或蒜汁,在用水稀释后加入果胶酶或纤维素酶或果胶酶和纤维素酶混合物进行酶解,经常规消毒处理后接入乳酸菌发酵,将发酵液通过强酸性阳离子交换柱进行交换,用氨水洗脱得到洗脱液后经旋转蒸发后浓缩到原来体积的1/8-1/15,加入乙醇,放置结晶即可得到白色或微黄色结晶物。本发明利用果胶酶、纤维素酶对大蒜浆或大蒜汁进行酶解,然后进行微生物发酵已除去对蒜氨酸提取、结晶有影响的化合物或大分子;利用水作为溶剂替代现有的有机溶剂提取,减少有机物在产品中的残留,降低成本。
