Abstract

对亚油酸和共轭亚油酸,分别在空气气氛和氮气气氛下进行了一定剂量的60Coγ-辐射,每隔2d测定其过氧化值。研究结果表明,辐射剂量和放置时间对不饱和脂肪酸的过氧化值有较大影响,共轭亚油酸的氧化稳定性好于亚油酸。并进一步探讨了不饱和脂肪酸在γ-辐射下过氧化值与反应机制之间的内在联系。

Other Abstract

Linoleic acid and conjugated linoleic acid were sampled in glass bottles charged with air and nitrogen re-spectively, and were irradiated with a)Co at different dose level. Peroxide value of samples were determined every two days. The results showed that the irradiation dose and storage period had great effect on peroxide value of two samples. Conjugated linoleic acid was more stable than linoleic acid during oxidation process. Relationship between the peroxide value and reaction mechanism under the y - irradiation was also discussed.
