假丝酵母脂肪酶Lipase AY 30G催化红花油水解研究

Abstract在无溶剂体系中,对假丝酵母脂肪酶Lipase AY 30G水解油脂的性能进行了研究,确定了这种脂肪酶的最适反应条件:温度35℃,缓冲溶液为0.05mol/L K2HPO4/KH2PO4,pH6.0,加酶量为m(酶):m(油)=0.2%-1%,添加剂CaCl2加入量为0.1%;在优化条件下反应4h的水解率可达96.8%。
